Baked eggplants with minced meat: we prepare "boats" with stuffing and cheese crust

This dish can also be served at the festive table, because it's not just vegetables cut into pieces, and "boats" inside which the meaty meat is hidden, moreover, there will be a ruddy cheese crust on top - no one will be able to resist. For the dish you will need:

  • 4 medium-sized eggplants - it is best to take vegetables with an elongated shape and large diameter;
  • 400 gr. Any minced meat - from pork, beef or chicken;
  • On 1 piece. Tomatoes and onions, as well as a clove of garlic;
  • 200 gr. "Parmesan" or other hard cheese;
  • Little by little parsley and dill, salt with pepper and mayonnaise.

Bake aubergine in this case is very simple: first prepare the vegetables: wash, cut in half, salt and fold in a bowl - they should stand up and give juice. After 20 minutes, the juice should be drained, the vegetables washed and cut out with a spoon with the flesh. You should have "boats" with walls 1 cm thick. The flesh needs to be cut into cubes. The billet should be laid out on a baking tray, oiled eggplants with oil and baked for 15 minutes (the oven should be heated to 230 degrees). During this time, prepare the filling: remove the peel from the tomatoes, they need to be boiled for this, so the skin is removed very simply, and after the flesh it should be cut into cubes. Finely chop the onion, garlic and greens. Fry the vegetables in a frying pan - first the flesh of the eggplant, then add toion and garlic, season with salt, pepper and place in a bowl. After the same must be done with minced meat. When the meat is ready, combine it with the fried vegetables - the filling has turned out. Then take semi-ready "boats" from the oven, stuff them with a mixture of minced meat and vegetables, generously sprinkle with chopped "Parmesan" and send them to the oven for half an hour. By the way, you can bake aubergines without meat - then you will get a vegetarian dish. In the filling you can put fried Bulgarian pepper and zucchini. Then the dish will turn out not only fully vegetable, but also low-calorie. That's just the cheese in this case you need to take as little as possible.

Aubergines baked whole

In most dishes we are accustomed to adding vegetables cut into slices or plates, but in this recipe it is suggested to prepare eggplant entirely, and served with sauce from mayonnaise (sour cream) and garlic, they can also be added to salads, previously cut into pieces, or used in Quality garnish. Take the necessary amount of aubergines, wash, cut off the green top. To make the vegetable better, on one side make 2-3 punctures with a fork. Put them on the grate, put a baking sheet under it. Bake aubergines at the maximum temperature for 40 minutes.
