Festive canapés with herring for a cocktail party and banquet

What is canapé? Sometimes this term means a type of reception of guests - a truncated buffet table. If you are invited to an evening of canapé, then count on a couple of light snacks, drinks, cakes. There are no hot dishes at this reception. And in the strict sense of the word canapé is a kind of sandwiches. They must necessarily be small, so that you can send them to the mouth entirely. Canapes at banquets are served as an aperitif - before a meal, and on receptions - along with cold snacks. These sandwiches look very elegant. To the festive table they are served with some delicacy: caviar, foie gras, sausage sausage, red fish ... We will learn how to make canapé with herring. Recipes of such appetizers are very common in the kitchens of northern peoples: Russians, Scandinavians, Danes, Germans. If we follow the regulations and act carefully, sandwiches will just get eaten!

For ten slices of rye bread, we need 200 grams of salted herring fillets. First we divide the fish, remove all the bones from it. Then cut it into longitudinal pieces of no more than two centimeters. In a cup with two soup spoons of vodka, we dissolve a pinch of sugar and stir freshly ground black pepper. With this liquid we will pour the pieces of herring, cover it with film and send it to the fridge to marinate. After three hours, we begin to form canape with herring. Take 100 g softened to room temperature oil, mix it with finely chopped dill (for your taste, somewhere around half the beam). On a dry frying pan fry 2-3 minutes a spoon of coriander seeds, then knead the spice in a mortar and drive into a fragrant oil. We smear slices of Borodino bread. We cut each into four parts. Apple pomoyem, cut into thin slices, sprinkle them, so as not to "rust", lemon juice. We lay on a piece of bread and butter a piece of herring. We put an apple on it.

Canape with herring on skewers

For this snack, the bread is cut as a crouton, that is, with a grater the crust is carefully peeled off. If desired, you can lightly slice the slices in the toaster or fry them as toast in oil. We divide the herring of spicy salting and cut it into pieces according to the amount of canapé. Salad bulb (red, without bitterness) shinkem rings. We catch from the jar a necessary number of tiny cornichons. If there are none, cut into small circles a medium-sized pickled cucumber. We form our canapé with herring. We put fish for butter without bread, on it - onion ring, and on top - cucumber. We pierce the entire structure for stability with a skewer or toothpick.

Canapé with herring salad

150 g of fatty herring fillets should be finely chopped (or scrolled through a meat grinder). Rub it into half an apple sour. Mix the mixer with a mass of a hundred grams of softened butter, chopped dill and a spoonful of mustard. Cut the black bread into small slices. Lay them on a fish salad and decorate the canapé with herring with a leaf of parsley or a green onion pen. If this version of the sandwich seems to you too nondetic, replace the butter with the same amount of mayonnaise.

Canape with herring and tomatoes

We make toast from white toaster bread. Still hot we rub them with a slice of garlic. We boil in a frying pan three spoons of tomato sauce with a pinch of red pepper. You can add to the paste and a clove of garlic, which rubbed bread. When the sauce has cooled, mix it with 50 grams of butter. We spread the bread. On it we lay a thin circle of boiled soft-boiled egg. From above place a piece of the salted slightly salted herring. We fix the result with a skewer and send it to the refrigerator to soak for a quarter of an hour.
