Extend your summer, or How to cook cherry jam

A lot has been said about the benefits of vitamins. The only trouble is that in our climate all sorts of fruit-berries ripen only once a year. So we have to switch to tablets, dragees and other synthetic ersatzes in the winter. And how you want to pamper yourself with fresh berries! For example, a cherry. And then we get home billets. You take the jar from the shelf, wipe off the dust from it, uncork it, and ... the scent of summer fills the room. So you can hear the singing of birds, the whiff of a light breeze and the warmth of the July sun on your cheek. If you know how to cook cherry jam, you can summon the summer to your guests among the winter blizzards.

There are many ways of blanks. Compotes, jams, cocktail berries are rich pink or green ... But in this article we will only consider the preparation of cherry jam. It can be made with bones and without them, with the addition of other products (for example, chocolate), cook traditionally for a long time or heat only a few minutes. Let's try to consider several options.

If you plan to bake a variety of cakes, then the cherry-chocolate jam will be the best decoration of your culinary masterpieces. Only half an hour of work - and ready. How to cook cherry jam in such an original way? We sort out the berry, mine, remove the bones and stems, put them into a pan. A quarter of a glass of water, a tablespoon of lemon juice and a glass of granulated sugar go on a half-kilo of cooked base product. We combine these ingredients and, stirring, bring to a boil. Once in the saucepan starts to bubble, reduce the fire to a minimum and pour half a glass of dark rum or cognac. Cook for about 20 minutes, not forgetting to stir. After that, remove the pan from the fire and add a broken into pieces slab (100 g) of black bitter chocolate. We stir until it dissolves completely. There is one "but": this preparation is not stored for a long time. But there is also a plus: you can prepare such a jam from a frozen product.

Now consider how to cook cherry jam with an old grandmother's way. For a kilogram of bones without seeds, you need to stock up a kilogram of sugar. Cherries fall asleep and leave until the white sand is completely red. Then intensively shake the pan, so that the sugar sinks down and connects with the juice that has been let out by the berries, and put it on the stove. As soon as the liquid starts to bubble, reduce the fire to a minimum and boil exactly five minutes. Leave the pan for about four hours, then bring it back to a boil and cook for 5 minutes. This procedure should be repeated three times. When you put the jam on the fire for the last time, start the process of sterilizing the cans in parallel. Do not wait for cooling, put the finished product in a glass container, tighten the lids. Banks turn upside down and cover with a blanket to cool as slowly as possible.

Many mistresses on the question of how to cook cherry jam, invariably answer: "Of course, with a stone!". This dessert is more aromatic - just need to warn the guests in advance to save their teeth. Do the workpiece by the above recipe.

But how to cook cherry jam, so that the vitamins in it are preserved as much as possible, not everyone knows. From a glass of water and 400 grams of sugar, you need to make a syrup. In it, fall asleep berries with bones, bring to a boil, sharply reduce the heat and hold on the stove for about 5 minutes. Then pour over the prepared warm jars and seal them sealed.
