"Bellini" (Bellini) is a well-known worldwide alcoholic cocktail, which entered the official classification of the International Bartenders Association. It refers to the type of "Long Drink" (the same as, for example, the drinks "Skrydraiver" or "Margarita").
History of creation
The cocktail "Bellini" takes us with its history to the old beautiful Venice - a city of luxury and grace. It was here in the second half of XX century, people first tried this wonderful drink, which is popular in our days.
In order to learn the history of this wonderful cocktail, we will go to the distant restless time of 1934-1948. It was then that the cult institution Harry's Bar ("Harry's Bar") owned Giuseppe Cipriani, who is also known as the creator of the Italian Italian carpaccio dish. The invented culinary drink was named after Giovani Bellini, the great Renaissance painter. Cocktail in its color range resembled paintings of the painter, made in white with pinkish reflexes tones.
A simple drink recipe, exquisite taste of sweet peach and sparkling prosecco made this cocktail very popular. In addition, thanks to the fact that French companies organized the production of peach puree for a drink, the cocktail "Bellini" could be prepared and served in any country at any time of the year.

By the standard for the preparation of this alcoholic beverage, only two ingredients are needed:
- Sparkling wine - 100 ml;
- Peaches or 50 ml of peach puree.

According to other recipes in the cocktail "Bellini" you can add instead of white peaches yellow. However, the color of the obtained drink in this case will differ from the original, therefore, to give the peach puree the desired shade, you can add a couple of drops of puree of red berries (for example, strawberries, cherries, raspberries). If the mashed potatoes are too thick, you can dilute it a little with water. Instead of prosecco, you can use any other sparkling wine in a drink , but experts do not recommend the use of champagne in Bellini. The proportions of peaches and alcohol can vary from 1 to 2 to 1 to 3. The ingredients of the beverage, pre-chilled, are recommended to mix not in a shaker, but directly in a glass. First, pour one part of the fruit pulp, and then two or three pieces of sparkling, all mixed with a spoon.
For those who lead a healthy lifestyle and do not accept beverages with a "degree", there is a non-alcoholic version of the famous "Bellini". It is prepared in exactly the same way as a classic cocktail, but the wine in it is replaced by any carbonated soft drink.
