Vinaigrette without potatoes: interesting ideas

Vinaigrette is a dish that in many families is considered a real classic. During its long history it has undergone many changes. In the 90's, vinaigrette was one of the most popular and common dishes, which was due to its cheap cost and availability of ingredients. Today this salad is no less famous, but thanks to its composition. Nowadays, after all, taking care of your health has become a kind of trend, and vinaigrette is just a storehouse of vitamins!

But it's not for nothing that they say that the most favorite food can be eaten. Therefore, in this article, we will consider several unusual variants of the familiar recipe from childhood, and more specifically, we will prepare a vinaigrette without potatoes.

A short historical digression

Strangely enough, but the name of the Russian salad was presented by the Frenchman Antoine Karem. He served as a cook at the court of Alexander the First and once he witnessed the preparation of vegetable salad, which was served with oil and vinegar. Here it is worth mentioning that in French vinegar is Vinaigre (they make it from fermented wine, hence the consonant name).

Probably, the dish aroused the interest of the cook, so he decided to clarify some details.

- Vinaigre? Asked the Frenchman.

"Vinaigrette, vinaigrette ..." answered the Russian cooks, so as not to allow for spatial explanations.

It is noteworthy that a salad of boiled vegetables has since been called precisely this word, which appeared quite accidentally. Whether potatoes were added to it, it is difficult to say, because in the 19th century this vegetable was not so common. But later this ingredient was considered compulsory. But vinegar is added to the vinaigrette at will, many do without it.

The story is also silent about when the first vinaigrette was cooked without potatoes. Most likely, this version of the recipe appeared with the goal of reducing the calorie content of this hearty dish.

The classic way

This dish has a low complexity of cooking. And because often products are taken "by eye". The main thing is that their number is approximately the same. Salt, cucumbers and butter is better to generally add in small portions, each time taking a sample.

Usually, the vinaigrette is boiled, and then the beet is cut into beets, potatoes and carrots. For harshness and a nice crunch, pickled cucumbers, and sometimes even sauerkraut and pickled mushrooms. Some decorate the salad with fresh herbs.

But along with the classic popular and other options, for example, vinaigrette without potatoes, the caloric content of which is much lower (about 50 kcal per 100 g instead of 120).

Unusual ingredients in the usual recipe

Do not think that a potato without potatoes is a boring, inexpressive dish. It is added a variety of ingredients that allow you to get a lot of different tastes. You can experiment with the following products:

  • Courgette;
  • celery;
  • Green peas (young or canned);
  • corn;
  • Cabbage (fresh or sour);
  • Capers, olives and olives;
  • Mushrooms;
  • Beans, chickpeas, lentils;
  • Spinach, dill, wild garlic, young garlic and onions.

And some add salted herring to this salad. Of course, if the dish is not intended for a fasting table or treats of vegetarian friends.

There are several varieties of this recipe with meat ingredients: tongue, heart, boiled beef, chicken breast, smoked fillet.

Alternative to potatoes

The most popular product, which is added to the vinaigrette as a starch base instead of potatoes, is beans. You can boil it in advance or use canned from a can (choose one that is without tomato). This product is also quite substantial, but it is many times more useful than potatoes, because it contains a large number of vitamins, fiber and digestible protein.

To prepare a vinaigrette without potatoes with beans, you will need the following products:

  • Beets and carrots - 2 pcs .;
  • Boiled beans - 2/3;
  • Salted or pickled cucumbers - 2-3 pcs .;
  • Onions (preferably red) - 1 pc .;
  • Vegetable oil - 4-5 tbsp. L.

After you cut, combine and mix all the ingredients, try a salad on the salt. Maybe you need a little dish. And if you like a delicate sour taste, pour lemon juice on vinaigrette.

Summer colors in vinaigrette

The harvest season is a wonderful occasion to please yourself with new dishes. In summer, too, you can cook an unusual vinaigrette without potatoes.

The recipe will only get better if you add fresh herbs and young peas.

You can replace the potatoes with grilled zucchini, patisson, zucchini or eggplant. Beets and carrots can also be baked - over coals or in the oven.

For taste and benefit

A separate mention deserves refueling. What could be better than fragrant home-made oil? To taste with it hardly compare other products. But it is worth remembering that this dressing is very high-calorie and oily. If you want to cook a truly dietary vinaigrette without potatoes, use another oil.

The most affordable alternative is olive. It is sold in almost any store of products. This oil is not in vain considered a record holder for the content of vitamins, antioxidants, trace elements.

You can fill the vinaigrette with linseed oil, which contains the minimum number of calories. Its taste is slightly more pronounced than that of olive, and the composition is also considered rich.

Feed to the table

Vinaigrette without potatoes is served in the same way as usual. It can be served as a salad or main course. It is perfectly combined with home-made smoked products and bacon, black and rye bread, salted fish.

Serve the vinaigrette in deep salad bowls or on flat dishes, laid with a special serving ring.
