Vareniki with cottage cheese: a recipe of the national Ukrainian dish

As a rule, such a dish as vareniki, will dissolve with different gravies, which depend on what kind of stuffing was used. So, for a dish of vareniki with cottage cheese, the recipe implies sour cream as a sauce. For apple vareniki honey is suitable, for cherry - cherry syrup, for potato - baked fat, for mushroom - sour cream and onion sauce.

Mixing dough plays a very important role in the preparation of good dumplings. The shell for them should be, on the one hand, strong, and on the other - gentle and well-cooked. That's why water as an ingredient should be used only ice.

Vareniki with cottage cheese: recipe

Take 200 g of fat cottage cheese (ideally - marketed cottage cheese, which is sold by weight, not factory packaging), wipe it through a sieve, and then mix with a couple of tablespoons of fatty sour cream (again market) and sugar (add to taste).

Now knead the dough, taking 1.5 glasses of flour, one egg and four tablespoons of milk (always warm). Milk can be replaced with warm low-fat kefir. Also add a pinch of salt and a tablespoon of vegetable oil (to ensure that the edges of the dough are then well protected). From the mass roll the ball, cover with a clean towel and leave for 20 minutes at rest.

After the specified time, divide the dough into two equal parts. One remove again under the towel, and the second roll out on the table, sprinkled with flour, into a thin layer with a rolling pin (if such a tool you do not have, then any glass bottle will do). A glass or a glass cut out mugs from the dough, put in the center of each stuffing and protect the edges. In the same way, do the rest of the test.

In order to feed your loved ones with such a delicious dish, like dumplings with curd, the recipe of which has just been presented, throw the dough pieces with the filling into boiling water, add salt (pinch) and sugar (a tablespoon). Cook for about seven minutes after boiling, periodically stirring with a spoon, so that the vareniki do not stick to the bottom. Serve the served dish with sour cream.

Above was considered, perhaps, the most popular version of this Ukrainian dish - vareniki with cottage cheese. The recipe of the test above is suitable for any other fillings. Delicious dumplings with potatoes, and with mushrooms, and sorrel and egg, and, in fact, with jam.

In western Georgia, by the way, there is one remarkable dish, called "kvari". In fact, behind this interesting word lies nothing but vareniki with cheese filling. Kvari is a favorite food of the famous singer Diana Gurtskaya, who prepares it with the consideration of Georgian culinary traditions.

Chees or dumplings with cheese: recipe

In flour (1.5 cups) pour in a little water (100 ml), continuously working a whisk, beat the egg and sprinkle a little. Water should be taken with ice, not just cold water. Stir and knead the soft dough.

Adyghe cheese or suluguni (300 grams) grate on a large scale, add and mix with a softened piece of butter.

Roll the dough into thin layers. Cut out the circles, put some cheese stuff in the center of each and blend the vareniki. In order for the quarks to not open during cooking and the cheese does not flow out, moisten the edges of each varenik with water and press firmly.

Finished dumplings with cheese is usually watered with warmed butter (cream) and separately served with matzoni. Replace this sour milk product with yogurt or yoghurt.

By the way, if you want to improve the taste of ready-made vareniki, then fold them (already cooked) in a clay pot, pour sour cream and put into the heated oven for another 5-7 minutes. And in order to get a more dietary dish, you can cook vareniki with cottage cheese for a couple in a double boiler, aerogrill or special dishes.
