Uzvar: recipe for a rich drink from dried fruits and desserts from it

Uzvar is a traditional dish of Ukrainian cuisine. It is considered a Christmas drink, being a symbol of fertility, wealth and family well-being. According to ancient customs, this rich compote of dried fruits should have necessarily cooked on the day of the birth of a new member of the family, which promised health to the baby. This article provides a detailed description of how to prepare a fragrant uzvar. The recipe, suggested below, will help to prepare a tasty and healthy dish without any difficulty. Fresh ingredients (fruits and berries) are not included in the composition, although you can add any of the available at hand to get a more saturated "bouquet".

Recipe "Uzvar from dried fruits"

Composition:

  • 3 liters of water;
  • 200 g of dried wild pear;
  • 200 g of apples dry;
  • 200 g in any ratio of prunes and raisins to each other;
  • 1 full glass of sand-sugar or 3/4 of a faceted glass of honey.

Preparation

  1. Dry all the dried fruits and pour a sufficient amount of warm water. After 10-12 minutes, drain the liquid and, putting the mass in a colander, rinse it under a flowing stream of cold water.
  2. Place the swollen drying in a saucepan and fill with water.
  3. Place the container on medium heat and bring it slowly to a boil. It is not necessary to accelerate this process, because already during the warming up, the dried fruits drink the solution with vitamins and nutrients.
  4. After boiling, note the cooking time - no more than 10 minutes. Before the readiness, pour the sugar, stir until dissolved and turn off the fire.
  5. Saturation and aroma Uzvar acquires during insisting. Only after 2-3 hours it will get the right taste. It is best to cook compote at night, and in the morning to serve. Honey is introduced into the already almost cooled drink. If desired, you can filter the string. From the remaining fruit mass, you get an excellent filling for sweet pies.

Based on the above described drink, you can get an original and useful dish in the form of a thick aromatic delicacy. What do you need to add to this? The recipe for a rich dessert provides for two options. Following them, you can get a mixture of boiled fruits and a thick mass.

Jelly Uzvar: the recipe first

With the resulting, brewed for 2-3 hours, compote gently, covering the lid with a thick, discard some liquid. Then pour it (in a cooled form) gelatin. Calculate the required mass of a free flow mixture based on the total volume of the mesh. For each 1 liter of compote will require 3-4 full st. L. Gelatin. After he swells, standing for 30-40 minutes, put the mass on a weak fire and bring to a boil (in any case you can not cook). To get a more attractive taste, cook the sauce more sweetly, or when combining the compote with the gelatin mixture, add a little honey.

Kiselnyj Uzvar: the recipe of the second

This dessert is brought to the desired consistency by adding starch to the compote in the last minutes of cooking. The more you add it, the thicker it will be. Usually, 4 liters of full steam are taken per 3 liters of Uzvar. L. Starch. Mix it dry with sugar, and then dissolve in a small amount of boiled water. After the Uzvar with dried fruits leaves within 5-7 minutes, start pouring a thin mixture into the prepared mixture and stir constantly. At the first signs of gurgling, turn off the heat and cover the pan with a lid. When the compote is almost completely cooled, pour it over transparent glasses and serve in a warm form.
