How to make coffee in Turkish

It is known that coffee does not grow in Turkey, but strangely enough Turkish coffee became popular all over the world. It's strange, is not it? When we say: "Turkish coffee", the imagination immediately draws the image of a hot aromatic drink served in a beautiful container - in the morning it will cheer, in the afternoon it will raise the tone, and in the evening - will add strength.

What makes Turkish coffee so famous? Why did you learn to cook such a delicious drink in this country? Unequivocally these questions can not be answered. Coffee has never been grown in Turkey, but the tradition of drinking this drink has arisen here for a long time. Throughout the country's existence, its national customs and culture were influenced by different peoples. In the same way, the culture of drinking coffee was introduced from the south. But despite this, it is considered a national drink on a par with Turkish tea.

From the history

Coffee spread from Yemen in the 15th century throughout the Arabian Peninsula. Unroasted coffee beans were imported to the capital of the then Ottoman Empire - Istanbul, and by the 16th century coffee had become popular in all cities and regions of modern Turkey.

In Europe, the grain came from Istanbul, and a few decades later Europeans became big fans of this exotic drink.
It should be said that coffee spread throughout Europe during the siege of Vienna by the Ottoman army in 1683. The city was besieged by the Turks for several months, and the army of the Ottoman Empire was supplied not only with ammunition and necessary food, but also with coffee. Grains were supplied in huge quantities. However, the siege could not last forever, and at some point the Turks retreated. During the retreat, the troops threw some of their food supplies, including bags of grain. It is not known what would be their fate, if for some reason in Europe some Ottoman soldiers did not remain. It is believed that it was at this time that the Turks introduced the population of Europe to this wonderful drink - coffee, and in Europe, with their light hand, coffee shops, so common now, first appeared.
However, despite the fact that the drink in Europe appeared thanks to the Turks, the way of its preparation differs significantly from the Turkish one. They prefer coffee with a very fine grinding, and in order to achieve maximum flavor and taste, the grains are fried in small portions, and then grind until they have cooled down.
Today in Turkey you can buy coffee already ground. To prepare the drink, jezvies are used there (we also call them Turks) - small metal or ceramic vessels with a long handle.

How to make coffee in Turkish

To prepare a real Turkish drink, you need to follow certain rules. First, the approximate calculation of coffee goes: one teaspoon with a small top on a cup of water, but it directly depends on how strong drink you prefer. Secondly, if you drink with sugar, it must be added in the process of cooking, otherwise it can completely change the taste of the drink. You can first boil water, then add sugar, after - coffee. Third, Turkish coffee is cooked on low heat. As soon as the foam is formed, it is removed with a spoon and unfolded in cups, and then again put jesus on the fire. The main secret of cooking is the ability not to "run away" foam, and drink - strongly boil.

If you travel to Turkey, then you will have no opportunity to enjoy real tasty Turkish coffee in any restaurant. You just need to be able to explain what kind of drink you want:

  • A very sweet coffee is called sekerli (she cher);
  • Moderately sweet - orta sekerli (or ta ker she ker li);
  • Coffee with a small amount of sugar is called az sekerli;
  • If you do not want sugar at all, order a sade (sa de).

Whichever type of drink you order, be sure that you are exclusively suited for delicious and fragrant coffee.
