How to boil an ear from salmon in Finnish and Russian.

The first of this fish, distinguished by its excellent taste, is cooked in different ways. How to boil an ear from salmon in Russian

For a dish you need:
- Salmon head - 1 piece;
- 3 medium potatoes;
- 2-3 carrots;
- 1 onion;
- A couple of teaspoons of salt;
- 3 liters of water;
- Spices: 5 bay leaves and 8 peas of fragrant black pepper.

The pan needs a small, three-liter or slightly larger, but for an ear from one head more than 3 liters of water can not be poured - it will not be delicious. If you need more soup - add the tail and fins of the salmon into the broth, then the amount of water can be increased accordingly. Fish should be taken chilled, not frozen.

Before cooking soup from salmon, fish should be washed and scraped. From the head must necessarily cut the gills, then once again rinse well the place where they were. If you leave the gills, the dish will get an unpleasant bitter aftertaste. Also in them can remain small debris and harmful substances, which, no matter how washed, will still fall into the plate.

Processed parts of fish should be put in a pan, then pour cold water. Start cooking better on high fire. Boil-boiled broth can be rid of foam with the help of noise, so that the soup turns transparent and appetizing.

The head should boil for about five minutes, after which peppers are thrown into the ear with peas and left on fire for another half an hour. Now you can add the rest of the ingredients: onions, potatoes, carrots. The very head is better to pull out and put on a plate to cool. Broth with vegetables remains on average fire for ten minutes, then salt and bay leaves are added to it. Then the ear is cooked until the vegetables are ready. The head should be disassembled, separating the bones, and the meat back to the soup 5 minutes before turning off the gas. Chopped greens should be put in each plate right before serving.

How to cook soup from salmon for hunting

The recipe for hunting ears is exactly the same as the previous one, except for one difference. In this dish, when the vegetables are added to the boiling broth, the millet is also filled. Preliminary it is washed at least 7 times to clear water. According to the recipe for 2-3 liters of water is about half a cup of millet.

How to boil an ear from salmon in Finnish

This is a very original recipe for a Russian person, which is traditional for Finns. It will require:
- 300 g of salmon fillet;
- a bulb weighing approximately 100 g;
- 600 grams of not very friable potatoes;
- 400 g of fatty milk or cream;
- 20 g of wheat flour;
- 1 liter of water;
- Different greens;
- salt.

A pan of water is put on the fire, and, until it boils, the potatoes must be cleaned and cut into cubes, and the onion is chopped into half rings. When the water boils, the onions and potatoes must be thrown into it and seasoned with salt. Next, the vegetables are boiled for 10 minutes at the lowest heat under the lid, while the fish is being cut. The fillet of salmon is cut into large pieces along with the skin, all scales must first be cleaned. The fish is added to the ear to boil for another 10 minutes along with the vegetables.

Milk from 6% fat or cream should be mixed with flour and beat the mixture with a whisk until the lumps are completely dissolved. Continuing to stir, pour it into the boiling ear, and immediately remove from the fire at the first boil. The greens are finely chopped and added to the dish before the plates fall on the table.
The taste of this soup is different from the usual soup, but it has its own connoisseurs, perhaps someone who has tried the Finnish version of this dish for the first time will prefer it.
