For sure in the stock of every experienced hostess there is not one recipe for homemade pies. However, very few people know that the dough for their preparation can be kneaded not only on milk or kefir, but also on the water. And such baking turns out not less gentle, soft and tasty. The filling for them should be sufficiently thick, homogeneous and fully finished. It is unacceptable that raw ingredients are present. Before you start making pies, you need to wait until the dough approaches. It is desirable that its volume is doubled.

To make the products better fried, they can be pre-rolled with a rolling pin. Also, you need to make sure that the level of oil in which pies will be cooked, about half covered them. It is desirable to put the fried items on paper towels and then serve them to the table.

Variant with meat and cheese

Such pastries will be a pleasant addition to family tea drinking. Thanks to the presence of a double filling, these patties are not only delicious, but also quite satisfying. In order not to stretch the process, first make sure that you have all the necessary components in your kitchen. To knead the dough for pies on the water, you will need:

  • 5 grams of sugar.
  • 250 milliliters of boiling water.
  • A packet of high-speed dry yeast.
  • 50 milliliters of vegetable oil.
  • A teaspoon of salt.
  • 250 milliliters of cold boiled water.
  • 600 grams of wheat flour.

Since the pies on the water consist not only of the dough, but also of the filling, take care that at the right time you have at your fingertips:

  • 250 grams of minced meat.
  • A couple tablespoons of 15% sour cream.
  • 100 grams of brynza and Dutch cheese.
  • 4 large fresh champignons.

In addition, you will need table salt, spices and dried garlic. The number of these components is calculated individually, taking into account the personal taste preferences of the chef and his family.

Process description

Before you begin to knead yeast dough for pies on the water, you should tackle the filling. For its preparation in a frying pan fry cleaned and diced mushrooms. After the mushrooms have left excess moisture, they add a little vegetable oil and chopped onions rings. When the vegetables acquire a golden hue, they are sent to the meat mince, everything is mixed well and fry until ready. A couple of minutes before the end of the process, the contents of the frying pan are slightly salted and seasoned with spices. After that, the future filling is removed from the plate and cooled.

In a separate bowl, grate the Dutch cheese and a kneaded fork with cheese. There add sour cream and a little salt.

In a container of warm water, yeast is dissolved, salt, sugar and vegetable oil are added to them. The resulting liquid is combined with sifted wheat flour and boiling water. All thoroughly knead to homogeneity.

The resulting soft elastic dough is divided into two approximately equal parts. One of them is laid out on a working surface, sprinkled with flour, and rolled out in a thin layer. On top lay minced meat, and then - cheese mass. All this is covered with a second layer of dough, they mark the edges of the future pies on it and cut them out with a conventional glass. The edges of the products are carefully tied with fingers, trying to give them a rounded shape. The resulting semi-finished products are sent to a hot pan and fried on both sides until ready. After that, ruddy pies on water are spread on a paper towel to get rid of excess fat, and served on the table.

Option with cabbage

According to this recipe, you can quickly make lush and soft homemade cakes. For their preparation you will need:

  • 300 milliliters of warm water.
  • A couple tablespoons of lean oil.
  • 600 grams of flour.
  • 1.5 teaspoons of dry fast-acting yeast.
  • 40 grams of butter.
  • A teaspoon of sugar and table salt.
  • Head of cabbage.
  • Head of onions.
  • A teaspoon of tomato paste.

Step-by-step instruction

To make delicious yeast pies on the water, you need to strictly maintain the recommended ratio of components. At the initial stage, you should do the test. For this, yeast, sugar, salt and warm water are combined in voluminous dishes. All is well mixed and poured into pre-sifted flour. There also send vegetable and melted butter. All carefully knead, cover with a clean towel and clean in heat.

While the dough rises, you need to make a filling. In a skillet, the bottom of which is oiled with vegetable oil, spread the onions cut into half rings and fry it. When it becomes transparent, shredded cabbage is sent to it and continues to be cooked. After a few minutes a third of a glass of boiled water is poured into the pan with vegetables and stewed for about a quarter of an hour. Ready fillings are poured, seasoned with tomato paste and cooled.

From the risen dough pinch off small pieces, roll them into flat cakes, stuff it with cabbage and gently patch the edges. The resulting patties on the water are fried in warmed vegetable oil and served on a table.
