Vegetable caviar: recipe from zucchini

Main Ingredients:

  • One sweet pepper;
  • Squash (1.5 kg);

Technology of preparation

Wash zucchini, cleanse the seeds, cut the peel. Cut into cubes. We take a deep frying pan, fill it with water. We put there the cut courgettes. Stew on low heat until soft. Cool it down. Carrots are washed and rubbed on a large grater. Peel off the husks and chop the onion finely. We take a skillet and fry the carrot with onion in vegetable oil. Also cool. Wash the tomato. Scald with boiling water, peel. Cut the tomato and pepper. Next, add the zucchini, garlic, carrot, onion, sliced tomato and pepper to the blender. Salt, season with spices the resulting mass.

If your kitchen does not have a blender, you can skip the food twice through the meat grinder. Mix the mixture into a large saucepan and put it under the lid on the stove. If you do not eat caviar after cooking, cool it and put it in a container. Put it in the refrigerator. A week in this form, it just stays. And if you want to cook for the winter, then bring the product to a boil. Then place in a sterilized jar, add a little vegetable oil and roll. Store in a dark cool place.

Vegetable caviar: a recipe for eggplant

Main Ingredients:

  • Two onions;
  • Four tomatoes;
  • Three cloves of garlic;
  • allspice;
  • sugar;
  • greenery;
  • Three Bulgarian peppers;
  • Three eggplants;
  • salt;
  • nutmeg;
  • Table vinegar;
  • vegetable oil.

Cooking process

Wash eggplant and pepper. Cut them into small cubes. In a bowl, combine the vegetables and salt. We take a deep frying pan, warm it up. We add vegetable oil. Then lay out the vegetable mixture. Stew about forty minutes. In the meantime, we clean and cut finely onions. We put it in a frying pan and extinguish further. We take pure tomatoes, cut them into cubes and add them to other vegetables. When tomatoes give juice, we introduce sugar. We extinguish another seven minutes. When the vegetable caviar is ready, remove the frying pan from the plate. We peel the garlic and chop it. It can be squeezed through a garlic squeezer. We cut the greens. We sprinkle caviar on all this.

Vegetable caviar: a recipe from beetroot

Main Ingredients:

  • Pumpkin (300 grams);
  • One onion:
  • ginger;
  • Apple vinegar;
  • thyme;
  • Two beets;
  • One carrot;
  • Two cloves of garlic;
  • salt;
  • allspice.

Technology of preparation

Wash the pumpkin and cut into pieces, so that it was comfortable to grate on a large grater. The same is done with beets and carrots. Onions and garlic finely chop with a knife. On a small grater, ginger. Next, mix all the crushed vegetables, add spices to taste and vegetable oil. On the choice we present the options for cooking vegetable caviar: on a stove in a frying pan on a small fire, in a multivark ("Quenching" mode), in an oven in a pot at 180 degrees.
